I would use this knife for my favorite salmon. I love to buy them in hole salmon and cut it myself, It can be very tricky especially when the blade is blonde or thick blade. This is perfect for salmon, the thin and long blade make it easy to remove the skin, it moves neatly alone the bone and it is razor-sharp.
