Gute Messer gibt es nicht umsonst, auch darum bin ich länger um dieses Messer herumgeschlichen, aber auch die einfache Frage, brauche ich das wirklich. Ein Nakiri Messer ist ja eigentlich ein Messer zum Gemüseschneiden, aber dieses hier vom Hersteller Shan Zu ist echt rasiermesserscharf, ich habe mir damit wirklich meinen ohnedies spärlichen Haarbewuchs an den Armen ganz leicht abrasieren können. Das ShanZu hat also den ultimativen Schärfetest bestanden, in dem es wie Butter durch Schaumstoff schnitt. Ich war so fasziniert, dass ich die relativ kleine Menge an Schaumstoff verbraucht habe, bevor mir einfiel, dass ich das other filmsen wollte, es klappt übrigens nur mit richtigem Schaumstoff, bei Visko oder Gelschaum funktioniert dieser Test nicht. Wasn't expecting much because of the low price, but actually it's pretty good. I do use it everyday in professional kitchen and after a few weeks of abuse it's still sharp and cuts just perfectly. It's bit on the heavy side though, 290g, if remember correctly. Happy with the purchase

I've bought these knives one at a time as I liked them and wanted more, and also brought one for a friend. All knives except one arrived very sharp, the one which was a little dull only needed a few strokes on the honing rod. I used especially the nakiri daily for the past few weeks and it keeps the sharpness very well.
They are all the pro damascus series except with the big cleaver I got the classic series. It feels robust and is sharp, though the rivets on the handle (on the classic) isn't perfectly flush, but it's not a bother. I just feel an edge there if I look for it, which I don't feel on the damascus ones.
The wood print on the glass fiber handle is somewhat pixelated - probably a design choice but I'm not a fan of that. Anyways, it's good knives both to use and to look at.
